Easy to whip up and I keep most of these ingredients around all the time. Ingredients:
8 large eggs |
2 tablespoons water |
1 tablespoon chopped fresh basil or 1/2 teaspoon dried basil |
1/8 teaspoon salt (or to taste) |
fresh ground pepper |
1 medium tomato, seeded, diced, and drained |
6 green onions, sliced (include some of the green part) |
1 tablespoon butter or 1 tablespoon margarine |
1/4 cup light sour cream |
Directions:
1. In a mixing bowl, whisk the eggs, water, basil, salt, and pepper together. 2. Fold in tomato and green onion. 3. Melt the butter in a large nonstick skillet over medium heat; swirl to coat bottom of pan. 4. When butter foams, add egg mixture all at once. 5. Let set for 20 seconds. 6. Cook, stirring, for 3-4 minutes or until light, fluffy, and almost dry. 7. Add sour cream and stir until blended. 8. Serve right away. |
