This hearty winter feast soup dish needs nothing more than a simple green salad and warm crusty peasant bread to make a satisfying meal. Add a nice cab and you have it all! Ingredients:
1 package jimmy dean sausage |
1/2 chopped onion |
3 cloves crushed garlic |
1/4 c red wine |
1/4 c chopped red pepper |
1/2 c green beans (cut bite size) |
1/2 c carrots (cut bite size) |
1/4 c orzo or rice |
1 1/2 tsp cayenne pepper |
3 c chicken broth |
black pepper to taste |
fresh grated parmesan to tast |
Directions:
1. Chop garlic and onion 2. Sautee sausage in soup kettle with garlic , onion and pepper 3. Add wine 4. Simmer 5. Add beans, carrots, orzo and cayenne 6. Mix it up a bit 7. Add enough broth to almost fill soup pan 8. Bring to boil a while 9. add black pepper to taste 10. Simmer 1 hr plus 11. Sprinke bowls of soup with parmesan and serve |
