I love this muffin from I love muffins book which I adapted to my liking. I used soy chorizo sauage to make it vegetarian. One can use beef, pork or any other spicey sausage. Great addition with soup and or slalds Ingredients:
2 cups flour |
1 tsp baking powder |
1 tsp paprika |
salt to taste |
4 oz sausage removed from casing ( cooked ) |
or |
i use 1/4 of soyrizio a vegan soy sauage |
1/2 green or red bell pepper finely chopped |
1 clove garlic minced |
2 large eggs |
1 cup milk, buttermilk, soy milk, i used skim milk |
6 tbs olive or other healthy oil |
Directions:
1. In one bowl combine sausage and peppers. 2. In another bowl mix dry ingrdients. 3. Then mix in sauage and pepper till well combined. 4. In another bowl, mix all the liquid stuff ( oil, eggs and milk ) 5. Combine the wet and drys together just to blend well. 6. Fill and divide into 12 small paper muffin cups or 9 medium muffin tins 7. Bake in a preheated 400F about 15 to 2o or until firm and done. 8. Remve to rack to cool |
