Savory Salmon and Leek Packets |

Ingredients:
1 tablespoon(s) olive oil |
2 leeks white and light-green parts only, thinly sliced |
1 5 or 6 oz. bag of baby spinach |
2 lemons |
4 4 oz. salmon fillets, perferably skinless |
salt and pepper to taste |
1/4 cup(s) white wine |
1 tablespoon(s) dill finely chopped |
Directions:
1. Preheat oven to 400 degrees. In large skillet over medium heat, add oil. Saute the leeks for 5 to 7 minutes, or until softened. Add spinach and saute until bright green and wilted. 2. Meanwhile, slice one lemon very thinly and squeeze 1/4 c. juice from the other lemon. Tear off 4 10 - 14 inch pieces of foil. Divide leek mixture into 4 parts and place in the middle of each piece of foil. Top with a piece of salmon and sprinkle with salt and pepper. Lay 2 or 3 lemon slices on top of salmon. Pull the sides of the foil up around the salmon to make a well. Drizzle each piece of salmon with 1 tbs. wine and 1 tbs. lemon juice. Sprinkle with dill. Fold foil around the fish, sealing well. Place the packets on a baking sheet. Bake for 15 to 20 minutes or until cooked through. To serve, place foil packs on individual plates. |
