Ingredients:
2 cups long grain white rice
1 tablespoon olive oil
4 cups chicken stock
1/2 cup apple juice
1 large onion, diced
2 cloves garlic, minced
2 teaspoons lemon juice
1/2 teaspoon dried thyme
Directions:
1. In a large saucepan, combine the rice and oil. Stir over medium heat until the rice is golden brown, about 5 minutes.
2. Add the stock, apple juice, onions, garlic, lemon juice and thyme.
3. Bring to a boil. Reduce heat to low, cover the pan, and simmer until all the liquid has been absorbed and the rice is tender, about 20 minutes.
4. Fluff with a fork before serving.
