SAVORY RICE CROQUETTES DATED 1954 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Weaks Estate in Fort Worth, Texas in 1995. Ingredients:
2 cups cooked rice |
2 medium eggs |
1/2 cup biscuit mix |
2 teaspoons onion powder |
1/4 teaspoon garlic powder |
1/8 teaspoon pepper |
1/2 teaspoon salt |
2 cups vegetable oil |
Directions:
1. In medium bowl combine cooked rice and eggs. 2. Add biscuit mix, onion powder, garlic powder, pepper and salt. 3. Stir everything up until it is sticky and gooey. 4. Heat vegetable oil until very hot then drop rice mixture in by spoonfuls. 5. Fry a few at a time until they are golden brown. 6. Remove with a slotted spoon and let them drain on paper towels. |
