From Veggie Revolution by Sally Kniedel and Sara Kate Kniedel This one-pot dish is very versatile. Topped with salsa or sour cream, it makes a great addition to a party or picnic. Inside taco shells, its a quick and easy meal. Ingredients:
3 cups pinto beans, refried |
1/4 cup diced green chilies |
1 teaspoon chili powder |
1 teaspoon cumin |
1 teaspoon oregano |
1 teaspoon garlic powder |
1 dash of hot sauce |
1 salt to taste |
1 pepper to taste |
2 cup grated cheddar cheese (optional) |
Directions:
1. Heat beans in a saucepan over medium heat, stirring and adding water if necessary to prevent sticking. 2. Add the rest of the ingredients. 3. Serve wrapped inside whole wheat tortillas, as a taco filling, or scooped on top of tortilla chips. |
