These are tasty. My catering friend makes these for us often. They are so good and can be eaten for breakfast, brunch or also good at dinner. Enjoy Ingredients:
1 white onion peeled and chopped |
6 parsley sprigs chopped |
8 potatoes peeled and shredded |
1 lemon juiced |
4 egg yolks beaten |
2/3 cup flour |
2 tablespoons olive oil |
4 teaspoons baking powder |
1/2 teaspoon cinnamon |
1/8 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
4 egg whites beaten until soft peaks form |
Directions:
1. Put onion, parsley and potatoes into a large strainer or colander. 2. Squeeze liquid from mixture using your hands then transfer mixture to a bowl. 3. Add lemon juice and mix with a fork. 4. Add egg yolks, oil, flour, baking powder, cinnamon, salt and pepper stirring to blend. 5. Quickly fold in egg whites. 6. Heat waffle iron and spread mixture evenly on iron and cook 10 minutes until golden. Serve waffles with sour cream and applesauce. |
