SAVORY POTATO BAKE DATED 1962 This recipe came my from my Aunt Maggie's collection that I inherited when I inherited the family collection in 1980. She obtained this from a church pot luck and I remember eating this when I spent weekends with her. Read more . Yummy.. Ingredients:
1 cup ricotta cheese |
1/2 cup soft whole grain or white bread crumbs |
1 tablespoon chopped fresh or 1 teaspoon dried marjoram leaves |
1/2 teaspoon salt |
1/4 teaspoon pepper |
3 egg whites |
4 cups shredded sweet potatoes |
4 cups shredded potatoes |
3/4 cup chopped onion |
2 cups applesauce |
1/4 cup sour cream |
Directions:
1. Preheat oven to 375. 2. Spray rectangular pan with nonstick cooking spray. 3. Mix cheese, bread crumbs, marjoram, salt, pepper and egg whites in large bowl. 4. Stir in potatoes and onion then spread in pan and bake 45 minutes. 5. Serve with applesauce and sour cream. |
