A cold crisp salad with the sweetness of basil, plus a savory richness with the addition of sauteed walnuts, tofu, and a handful of feta Ingredients:
1 large head of romaine or red leaf lettuce |
1 block of cubed extra firm tofu |
1 cup chopped walnuts |
5 tbs. pesto |
1/2 cup water |
1/2 to 1 cup crumbled feta |
olive oil for saute |
Directions:
1. Saute the cubed tofu and walnuts in heated oil until the tofu is slightly golden (~7 minutes) 2. Add the pesto and water and turn the pan to low, gently stir for just a couple of minutes and remove from heat 3. Wash and finely tear the lettuce 4. Once the lettuce is prepared and the saute has cooled (it doesn't have to completely cool if you prefer a warm dressing) pour over the lettuce, toss and serve with the crumbled feta on top, MMM! |
