                     The most labor intensive part is boning the chicken. always a messy job.  June always doubles the recipe.  Instead of knocking yourself out, go to the grocey store and buy Lloyds Barbequed Shredded Pork.  Read more .  While at the store, pick up a whole rotisserie cooked chicken .  Men will really go for this dish.  (Is that a sexist remark?? lol) Prep time is June's way.  Ingredients: 
                    
                        
                                                2 cups barbequed pork, chopped  |  
                                                2 tbsp. butter  |  
                                                1 cup boiled, boned, cubed chicken  |  
                                                1 cup chopped onion  |  
                                                1-16oz. can mashed tomatoes with juice  |  
                                                1-5oz. can drained white corn  |  
                                                1/4 tsp. black pepper  |  
                                                1/4 tsp. salt  |  
                                                2 tbsp. barbeque sauce  |  
                                                dash tabasco sauce  |  
                                                garlic to taste  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Melt butter and sauté onion until tender. 2. Add all ingredients except seasonings and cover and simmer for 1 hour. 3. Add seasonings and continue simmering as long as you wish. 4. variations: 5. June uses 4 or 5 cans of petitie-cut tomatoes, diced in juice and 2 cans of shoepeg white corn, drained. 6. Lots of fresh garlic is good. Double everything else and simmer for a long period of time....2 to 3 hours.                              |
