Trying to incorporate more fish in my diet and recently received some savory in a swap. Found this recipe in a Pillsbury cookbook and it sounded appealing. Haven't tried yet. Prep time includes marinating time. Ingredients:
1 1/2 lbs fish fillets |
1/2 cup apple juice |
1/4 cup lemon juice |
1 garlic clove, minced |
1/2 teaspoon dried savory or 1/2 teaspoon thyme leaves |
lemon (optional) |
Directions:
1. Arrange fish fillets in single layer in ungreased 2-quart baking dish. In small bowl, combine apple juice, lemon juice, garlic and savory or thyme; pour over fish. Cover with plastic wrap; refrigerate 1 to 4 hours to marinate, turning occasionally. 2. Remove fish from marinade. Arrange on broiler pan. Broil 4 to 6 inches from heat for 4 to 8 minutes or until fish flakes easily with fork, brushing occasionally with marinade. Discard any remaining marinade. Garnish with lemon. |
