I'm a citrus fan, so I came up with this recipe to showcase it and jazz up mildly-flavored fish. Ingredients:
4 boneless white fish fillets |
cooking spray |
2 garlic cloves |
1/4 cup chicken stock |
2 tablespoons cornstarch |
1/4 cup lemon juice |
2 pinches cayenne pepper |
1 1/2 tablespoons sugar (to taste) |
2 dashes soy sauce (to taste) |
1/8 teaspoon cayenne pepper |
1/4 teaspoon paprika |
1/8 teaspoon marjoram |
1/8 teaspoon italian seasoning |
1/8 teaspoon garlic powder |
Directions:
1. Press or finely chop garlic cloves, then saute in a saucepan sprayed with cooking spray. It may stick, that's okay. 2. When garlic starts to brown, add chicken stock and stir. 3. Mix lemon juice and cornstarch, then add to chicken stock. 4. When mixture begins to thicken, add enough sugar to balance the tartness, then add cayenne. 5. Place on low heat. 6. Rinse fish and spray with cooking spray. 7. Mix remaining spices and sprinkle half over fish. 8. Broil fish until it flakes easily, flipping once and applying the rest of the spices. 9. Put fish on plates and pour sauce over top. |
