Simple but Elegant Ingredients:
4 leeks, white part only, washed and chopped |
1/2 cup chives, finely chopped |
1 stick butter |
4 cups chicken broth |
2 cups mashed potatoes, leftover is great |
2 tsp. dried savory |
3 cups half and half |
salt and pepper to taste |
Directions:
1. In large saucepan, saute leeks and chives in butter until tender 2. Add broth, potatoes, and savory and bring to boil 3. Reduce heat and simmer for 8-10 minutes 4. Cool slightly 5. In blender, process in batches until smooth 6. Return to pan and add cream, salt and pepper 7. Heat through |
