Savory is a wonderful addition to this soup Ingredients:
4 leeks, white part only, washed and chopped |
1/2 cup chives, finely chopped |
1 stick butter |
4 cups chicken broth |
2 cups mashed potatoes, leftover is great |
2 tsp. dried savory |
3 cups half and half |
salt and pepper to taste |
Directions:
1. In large saucepan, saute leeks and chives in butter until tender 2. Add broth, potatoes, and savory and bring to boil 3. Reduce heat and simmer for 8-10 minutes 4. Cool slightly 5. In blender, process in batches until smooth (Or use an immersion blender to blend) 6. Return to pan and add cream, salt and pepper 7. Heat through |
