SAVORY FRUIT SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Alford Estate in Tyler, Texas in 1987. Ingredients:
3 pounds fresh peaches cut into chunks |
1/2 cup coarsely chopped fresh basil |
2 small red bell peppers halved seeded and sliced |
1/2 cup chopped red onion |
1/2 cup olive oil |
1/4 cup herbed white wine vinegar |
2 tablespoons granulated sugar |
1/2 teaspoon each rosemary, thyme, marjoram and pepper crushed in a mortar |
Directions:
1. Combine fruit, basil, bell pepper and onion in large bowl. 2. In a separate bowl combine oil, vinegar, sugar, herbs and pepper then mix well. 3. Pour over fruit and toss to coat then refrigerate at least an hour to allow flavors to blend. |
