Savory Dijon Chicken Breasts with Pomegranate |

Very yummy chicken recipe- the pomegranate seeds go lovely! Ingredients:
1 pomegranate , seeded |
1 lb boneless, skinless chicken breast halves |
1 tsp thyme |
1/2 tsp salt |
1/2 tsp pepper |
2 tbsp vegetable oil |
1 medium onion |
2 cloves garlic |
1/2 c broth |
1/4 c orange juice |
1 tbsp dijon mustard |
1 tsp cornstarch |
3 c cooked rice |
Directions:
1. Seed pomegranate, set aside. 2. rub chicken breasts with thyme, salt and pepper. 3. In large skillet, heat oil over med heat until hot. Add chicken and cook 10 minutes, or not pink, turning once. Remove chicken. 4. Add onion and garlic. cook 5-7 minutes until onion is golden. 5. Return chicken to skillet. 6. In small bowl, whisk broth, orange juice, mustard, and cornstarch. add to skillet. Cook 1-2 minutes until thick. 7. stir in pomegranate seeds. Heat through. Serve over rice. |
