Savory Chicken Sausage Patties |

I kept adding more herbs and spices and finally got it right! Savory, spicy, and best of all low fat, but you'd never know it. Great as a breakfast side dish, on a sausage egg and cheese sandwich, or crumbled up into some butternut squash soup! Read more ! Ingredients:
10 0z ground chicken breast (the lean 99% fat free) |
2 cloves garlic, chopped |
1/2 tsp coarse kosher salt |
1 tsp poultry seasoning (i use bell's) |
1 tsp dried thyme |
1 tsp rubbed sage |
1 tsp chopped fresh rosemary |
1 tsp fennel seeds, crushed |
1/4 tsp cayenne |
1/2 tsp onion powder |
1/4 tsp mace |
1/2 tsp ground savory |
salt & pepper |
1/2 tsp crushed red pepper flakes |
cooking spray or 1 tbsp oil |
Directions:
1. Place garlic on cutting board and sprinkle with salt. Using the side of a broad knife, grind salt into garlic until it is ground into a paste. (You can also use a mortar and pestle) 2. Add to chicken, along with other seasonings, and mix well. Shape into small patties, about 3 across, less than 1/2 thick. (They will not shrink much when cooking) 3. Heat oil in skillet over medium high heat. Fry patties, about 3 minutes each side, until golden and cooked through. They are virtually fat free, so don't overcook or they will dry out! Cook just until juices run clear. 4. These freeze and reheat nicely. |
