Chicken and red potatoes baked in a savory sauce. This is a fast and easy dinner. My future hubby and I really enjoyed this dish we thought it was so tasty. When I made this I made several minor changes to the recipe. I used 3 chicken quarters (bone-in) that I cut into pieces to make a thigh and leg, 8 small red potatoes and 2 small onions. Next time I make this I plan to bump up the onions as we enjoy baked onions. I may add some sliced carrots to the mix. Ingredients:
1 ounce herb with garlic soup mix |
3 tablespoons water |
4 boneless chicken breast halves (6-8oz each) |
2 large red potatoes, cubed |
1 large onion, halved and cut into small wedges |
Directions:
1. In a large resealable plastic bag, combine the soup mix and water. Add the chicken and toss to coat. 2. Transfer to a greased 13x9x2-inch baking dish. 3. Bake, uncovered, at 350 for 40-45 minutes or until vegetables are tender and chicken juices run clear, stirring vegetables occasionally. |
