Ingredients:
6 cup(s) butternut squash (about 2 medium) |
1/4 cup(s) golden raisins |
1 tablespoon(s) honey |
1/2 teaspoon(s) madras curry powder |
2 tablespoon(s) minced fresh cilantro |
1 tablespoon(s) olive oil |
salt and pepper to taste |
Directions:
1. Preheat oven to 500 deg F 2. Peel and cube 6 cups of squash 3. Toss squash in oil, then season with salt and pepper to taste 4. Place squash in a single layer on a jelly roll pan. Bake 10 minutes or until tender 5. Remove from oven, toss squash with remaining ingredients 6. Serve immediately |
