This is one of my family's favorites, and one of the most requested! Ingredients:
1 tablespoon extra virgin olive oil |
1 lb beef sirloin, tips cut into 1-inch cubes |
1 tablespoon low sodium soy sauce (i've used regular as well, depends on how salty you like food) |
2 cups water |
1 teaspoon beef bouillon granules |
1/2 cup dry red wine |
2 garlic cloves, minced |
1/4 teaspoon fresh ground black pepper |
2 cups sliced carrots |
1/4 teaspoon sugar |
1 tablespoon cornstarch |
2 cups cooked egg noodles (or white rice) |
Directions:
1. Coat a dutch oven with cooking spray. Add olive oil and heat over high heat. Add beef and brown, stirring constantly, being careful not to scorch, about 5 to 10 minutes. Add soy sauce, 1 cup water, bouillon granules, wine, garlic and black pepper. Bring to a boil, cover tightly, reduce heat, and simmer 70 minutes, or until meat is tender. Add carrots, sliced diagonally, and cover tightly. Simmer 15 minutes longer. 2. In a small mixing bowl, combine remaining 1 cup water, sugar, and cornstarch. Mix well, add to beef mixture, and stir. Bring to a boil and stir 1 minute. 3. Place noodles, or rice, on one side of a serving platter. Spoon beef mixture beside noodles and serve. |
