Eat Well Stay Well. I have homemade elderberry vinegar that I will use for this. Ingredients:
1/4 cup raspberry vinegar or 1/4 cup balsamic vinegar |
4 teaspoons olive oil |
2 teaspoons honey |
2 teaspoons dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon pepper |
8 cups mixed salad greens |
1 cup thinly sliced fennel |
1 cup raspberries |
1 cup blackberry |
1 cup yellow cherry tomato, halved |
2 ounces mild goat cheese, crumbled |
Directions:
1. In a small bowl, whisk together the vinegar, oil, honey, mustard, salt and pepper. 2. Arrange greens on 4 salad plates. Top with the fennel, berries, tomatoes and goat cheese. 3. Drizzle with the dressing. |
