Read more . I would start off with these totals, and add ingredients as needed. Ingredients:
12 oz flat beer (leave it our for a little while in a glass) |
1/2 cup diced celery |
1/2 cup diced onion |
1/2 cup diced carrots |
1 tsp mustard powder |
1/2 cup (1 stick) unsalted butter |
1/2 cup flour |
4 cups chicken broth |
1 cup grated sharp cheddar cheese |
1 cup grated jalepeno monterey jack (pepper-jack) cheese |
2 tbsp grated parmesan cheese |
fresh ground black and/or crushed red pepper (spicy!) to taste |
Directions:
1. Sautee celery, carrots, and onion with butter in frying pan over low-medium heat until tender (but not brown) 2. meanwhile, simmer chicken broth and beer in a medium saucepan 3. then puree veggie mixture in blender 4. return mixture to pan and reheat to medium 5. add flour and mustard slowly, stirring constantly 6. when lightly browned, add to broth mixture and turn heat to high 7. add cheeses, stirring constantly, boil for a few minutes until cheese is melted and sauce is thick 8. taste test and add more grated cheese if needed for flavor or to thicken (FYI- adding cheddar will definitely make the dip saltier) 9. remove from heat 10. stir occasionally as it cools 11. serve hot or chill mixture in fridge for a few hours 12. enjoy with tortilla or potato chips |
