Savory Apple Stuffing

A perfect stuffing for pork or duck. This is from The Woman's Day Encyclopedia of Cookery 1968
Ingredients:
1/2 c chopped celery and leaves
1 yellow onion, chopped
2 tbl minced parsley
1/4 c butter
4 cups peeled tart apples
1/4 c firmly packed, light brown sugar
1 tsp salt
1/2 tsp each of ground sage, marjoram and thyme
1/4 tsp pepper
2 c dry bread crumbs
Directions:
1. Saute celery, onion and parsley in butter until tender
2. Add apples, sugar and seasonings
3. Cook 5 minutes longer
4. Add bread crumbs and mix well ( adjust crumb quantity to suit)
5. Makes about 4 cups
6. Use with Crown Pork roast, pork chops or duck
