A perfect stuffing for pork or duck. This is from The Woman's Day Encyclopedia of Cookery 1968 Ingredients:
1/2 c chopped celery and leaves |
1 yellow onion, chopped |
2 tbl minced parsley |
1/4 c butter |
4 cups peeled tart apples |
1/4 c firmly packed, light brown sugar |
1 tsp salt |
1/2 tsp each of ground sage, marjoram and thyme |
1/4 tsp pepper |
2 c dry bread crumbs |
Directions:
1. Saute celery, onion and parsley in butter until tender 2. Add apples, sugar and seasonings 3. Cook 5 minutes longer 4. Add bread crumbs and mix well ( adjust crumb quantity to suit) 5. Makes about 4 cups 6. Use with Crown Pork roast, pork chops or duck |
