Savorie’s Tomato Bisque Soup |

Great soup from Savorie's restaurant in Stillwater MN. It is great and quite easy to make! Ingredients:
3/4 cup onion, chopped |
1/3 cup butter |
3/4 teaspoon dill seed |
1 teaspoon dill weed |
1 teaspoon oregano |
1/4 cup honey |
1/4 cup flour |
1 (28 ounce) can diced tomatoes |
3 cups chicken stock |
1 1/2 teaspoons salt |
1/2 teaspoon white pepper |
1/4 cup fresh parsley, chopped |
2 cups half-and-half cream |
Directions:
1. Sauté onion, dills, oregano in butter. 2. Add flour, cook roux. 3. Add tomatoes and (juice to equal stock amount) and stock. 4. Salt & pepper. 5. Bring to low boil. 6. Reduce & simmer. 7. Cook long enough to get rid of flour taste. 8. Before serving, warm up the half & half and slowly add to hot mixture along with parsley and honey, low simmer (so it does not break to boil) and serve. |
