Sauteed Zucchini Spears cook quickly and are perfect for busy weeknight meals. Ingredients:
3 medium zucchini (about 1 pound) |
1 1/2 teaspoons olive oil |
1/2 cup coarsely chopped onion |
1/4 teaspoon salt |
1/8 teaspoon black pepper |
Directions:
1. Cut zucchini in half lengthwise; cut each half crosswise into 2 pieces. Cut each zucchini piece into 3 spears. 2. Heat oil in a large nonstick skillet over medium-high heat; add zucchini and onion. Sauté 5 to 6 minutes or until vegetables are lightly browned. Sprinkle with salt and pepper; toss well. |
