Sauteed Winter Greens With Bacon |

A delightful bacon-dripping saute of your choice of greens and dressed simply with salt, pepper and butter OR a little pomegranate jus from your chicken dish. From seriouseats Eat for Eight Bucks series. Ingredients:
3/4 pound kale, chard, collards or spinach, sliced into 1/2 ribbons |
2 strips bacon, chopped |
3 cloves garlic, minced |
1 cup water |
1 tablespoon unsalted butter |
salt and freshly ground black pepper |
Directions:
1. In a large, lidded saute pan, heat the bacon over medium heat until beginning to crisp. 2. Add the garlic and saute 30 seconds longer 3. Add greens and cook, stirring frequently, until bright green and softened. 4. Add water and simmer, partially covered until greens are tender and liquid has evaporated, 6 to 10 minutes. 5. Season with salt and pepper to taste. 6. Just before serving, stir in butter to coat. 7. **Great side to Roasted Chicken with Pomegrantate Jus |
