Sauteed String Beans With Tomatoes And Olives |

My mother always made these when i was growing up. The olives are optional and my own addition. Ingredients:
1 pound string beans-either frozen french cut or fresh haricot verts |
1 medium tomato-chopped |
4 cloves garlic-chopped |
1 small onion chopped |
6-10 kalamata olives-pitted and roughly chopped |
fresh basil torn in pieces |
2 tbsp olive oil |
salt to taste |
Directions:
1. Heat oil in a saute pan. 2. Add onions and saute until softened 3. Add garlic and tomatoes, saute until tomatoes begin to melt. 4. Stir in olives and add string beans. 5. Mix well. 6. Cover and let cook until beans are tender, stirring ocassionally. 7. Add salt to taste if necessary. |
