Sauteed Spinach With Garlic |

From Remedy magazine. I often serve this as a bed for baked or grilled salmon Ingredients:
1 tablespoon olive oil |
4 garlic cloves, finely minced |
1 (10 ounce) bag spinach, stemmed and coarsely chopped |
3 tablespoons orange juice |
salt and pepper |
Directions:
1. In a large sauté pan, heat oil over medium-high heat. 2. Add garlic and cook, stirring , about 30 seconds. 3. Add orange juice; cook until reduced a bit, about 30 seconds. 4. Add spinach and sauté, stirring constantly, until it begins to wilt. 5. Season with salt and pepper and stir well. |
