Sautéed Spinach and Garlic |

A very simple side dish. Ingredients:
2 tablespoons olive oil |
2 tablespoons butter |
4 garlic cloves, sliced thin |
3/4 lb spinach leaves, washed and drained |
Directions:
1. Melt butter in olive oil over medium heat in a large saute pan with a lid. When foaming subsides, add garlic. Saute 2 minutes or until edges of garlic slices are barely beginning to brown. Add spinach and toss to coat. Cover and cook 3 minutes. Uncover, stir and toss spinach until wilted, dark, and reduced in volume by 3/4. |
