Ingredients:
1 pound fresh spinach |
3 tablespoons olive oil |
4 cloves garlic, minced |
1/2 teaspoon red chili flakes |
2 tablespoons freshly squeezed lemon juice |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Bring a large pot of water to a boil. Add spinach and stir for 30 seconds. Strain in a colander. Squeeze out excess water. Reserve spinach. 2. In a saute pan over medium-high heat add olive oil. Add garlic and chili and cook for approximately 2 minutes, or until garlic just begins to brown. Add spinach and saute for 2 minutes. Add lemon juice, salt and pepper. Toss and serve immediately. |
