Sauteed Spicy Peppers with Marjoram Vinaigrette |

A nice summer salad. Ingredients:
4 tbsp extra virgin olive oil |
1 cup red onion, sliced thin |
1 clove garlic, peeled and left whole |
4 banana peppers |
2 red bell peppers, cut into 1/2 strips |
2 yellow bell peppers, cut into 1/2 strips |
2 jalapeno peppers, cut into 1/4 strips |
Directions:
1. Heat oil over medium heat until smoking. Add the onion and garlic and saute 4-5 minutes until soft. Add all the peppers and saute until soft, about 10-12 minutes. Transfer to a large mixing bowl and allow to cool. 2. Toss with marjoram vinaigrette. |
