Ingredients:
4 soft-shell crabs, cleaned |
2 tablespoons all-purpose flour |
2 tablespoons yellow cornmeal |
1/2 teaspoon ground red pepper |
1/4 cup skim milk |
vegetable cooking spray |
1 teaspoon vegetable oil |
2 tablespoons lemon juice |
2 teaspoons chopped fresh parsley |
Directions:
1. Rinse crabs thoroughly with cold water. Pat dry with paper towels. 2. Combine flour, cornmeal, and pepper in a shallow dish. Dip crabs in milk, and dredge in flour mixture. Coat a nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add crabs; cook 2 to 3 minutes on each side or until browned. Transfer to a serving plate. Sprinkle evenly with lemon juice and parsley. |
