I love this shrimp recipe, nice and light but still satisfying. I use Herbes De Provence where it calls for herbes de provence, but you can use any herbes de provence mixture you like. Ingredients:
2 tablespoons olive oil |
1 lb jumbo shrimp, peeled, tail-on, deveined |
1 tablespoon herbes de provence |
salt |
pepper |
1 1/4 cups plain yogurt |
2 tablespoons mayonnaise |
2 tablespoons whole grain mustard |
1 1/2 tablespoons maple syrup |
1 teaspoon ground turmeric |
1/4 cup basil, fresh, chopped |
Directions:
1. In a large skillet, heat oil over medium-high heat. 2. Add the shrimp and herbes de Provence. 3. Season to taste with salt and pepper. 4. Cook the shrimp, stirring frequently, until pink and cooked through, about 3 minutes each side. 5. In a small bowl, mix yogurt, mayonnaise, mustard, maple syrup, turmeric and basil until smooth; Season with salt and pepper to taste. 6. Place the yogurt mixture in a dipping bowl; place on serving platter along with cooked shrimp. |
