5-Ingredient Fix Contest Entry. An unusual way to serve potatoes to be sure, but surprisingly potatoes are simply delicious with a peanut-satay sauce. Fell in love with this sauce on a trip to Thailand. First cooked this during a bbq meal and everyone raved. Had a few more ingredients in it then, but even this condensed recipe is popular with my bbq buddies. Ingredients:
1 (20 ounce) bag simply potatoes diced potatoes with onion |
1/2 teaspoon curry powder |
1 garlic clove, finely minced |
1/4 cup thai peanut sauce (satay) |
2 tablespoons extra virgin olive oil |
Directions:
1. Mama’s Breakfast Surprise #5FIX. 2. Thaw and drain potatoes and place in a large bowl, set aside. 3. In a medium bowl mix the curry, garlic and peanut (satay) sauce and stir to thoroughly blend. Set aside. 4. Heat the olive oil in a large non-stick skillet then add the potatoes, cooking over medium heat for about 10 minutes. Do not stir or turn potatoes over. 5. Turn the potatoes over and add the peanut sauce, stirring to coat all the potatoes. Cook for an additional 7-8 minutes until they are soft and tender and peanut sauce is bubbling. 6. Serve with pork chops, steak or roasted chicken. |
