This is a simple appetizer which most everyone will like. It is a sweet and savory combination of vegetables with nice addition of crispy parmesan cheese. Ingredients:
parmesan cheese (buy a wedge not pre-grated) |
1 large white onion |
1 large red pepper |
2 cups sliced mushrooms |
1 tab butter |
dry red wine |
olive oil |
balsamic vinegar |
salt |
pepper (i used a combination of black, white and red pepercorns) |
crispy italian or french bread |
Directions:
1. Parmesan Cheesh crisps 2. Pre-heat over to 425 F 3. Lightly spray a baking sheet with non-stick spray (i.e. PAM) 4. Grate cheese into small piles and flatten on pan 5. Make 6-8 piles on pan (keep at least an inch from others) 6. Place in oven for 3-4 minutes or until golden brown and crispy 7. Remove and let cool 8. They will harden to thin wafer-like crisps 9. Set aside 10. Onion, Mushroom and Peppers 11. Slice onion finely 12. Slice pepper into strips 13. Heat skillet 14. Add olive oil and coat pan 15. Once hot, add onion and mix to coat with oil 16. After 2-3 minutes, add peppers and 1/2 mushrooms 17. Add remaining mushrooms 18. Add salt and pepper as desired 19. Mix periodically 20. Cook until onions are clear 21. Add dash of balsamic vinegar 22. Add red wine to taste 23. Add tab of butter 24. Let butter melt 25. Serve with a slice of bread and place 2 parmesan crisps on top |
