Sauteed Halibut with Gazpacho Salsa |

To accompany the fish and salsa, toss fresh salad greens with a mixture of salt, pepper, oil, and vinegar (to taste). Ingredients:
2 (8-ounce) fillets of alaskan halibut or any fresh fish available |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 tablespoon olive oil |
2 cups salad greens or mixed lettuces |
gazpacho salsa |
Directions:
1. Sprinkle fish with salt and pepper. Heat oil in a large skillet over medium-high heat. Add fish; cook 3 minutes on each side or until fish flakes easily with a fork. 2. Place 1 cup salad greens (prepared as described above) on each plate. Serve with Gazpacho Salsa topped with fish. |
