Sauteed Green Beans With Goat Cheese And Almonds |

The flavor combination of this dish is a standout when served with almost any protein and any starch. It is very versatile Ingredients:
2 oz. sliced raw almonds |
1 tsp. butter (or extra virgin olive oil for lighter dish) |
garlic salt to taste (be a little generous--it is okay) |
8 oz. fresh french green beans (thin green beans) |
1 tbsp. butter (or e.v. olive oil for a lighter dish) |
1/2 clove minced garlic |
1/8 tsp. dried tarragon |
a pinch of salt and a pinch of black pepper |
1/4 tsp. lemon juice |
1-2 oz. crumbled goat cheese |
Directions:
1. In a small saute pan on medium heat, melt the butter for the almonds; let warm up until fragrant 2. add almonds to coat bottom of pan in one layer. add garlic salt stir until almonds begin to brown. *note-do not leave...the almonds burn very quickly if you turn your attention away. 3. when slightly brown (don't worry if some look a little anemic...better a little on he light side than burned), pour out onto a paper towel to dry/cool. spread them out so the paper can absorb any excess butter 4. In the same pan (why dirty more dishes than you need to, right?), melt the butter for the beans on medium-high heat, add the beans, garlic, salt, pepper , lemon and tarragon, and saute until tender-crisp...about 4-6 minutes depending on how crispy you like them 5. pour into a serving bowl, add the goat cheese, and toss to mix. Immediately plate and sprinkle with the almonds. Serve and enjoy! |
