Sauteed Green Beans With Crisp Shallots |

I found this recipe in Working Mother magazine. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
1/3 cup vegetable oil |
1/2 cup thinly sliced shallot (5 or 6) |
2 tablespoons unsalted butter |
2 tablespoons olive oil |
2 lbs green beans, trimmed |
salt |
fresh ground pepper |
Directions:
1. Heat vegetable oil in a small skillet over medium-high heat. Add half the shallots and fry until crisp and nicely brown, 1-2 minutes. Using a slotted spoon, transfer to a plate lined with a paper towel to drain. Repeat with remaining shallots. Set aside at room temperature. (Shallots may be cooked several hours in advance). 2. Heat a large skillet over medium-high heat and add butter and olive oil. When butter is melted, add green beans and saute, stirring frequently, until bright green and crisp tender, about 5 minutes. Season with salt and pepper. Transfer to a serving platter and top with crisp shallots. Serve immediately. |
