I got this recipe from a Cooking Light cookbook. Ingredients:
1 lb fresh green beans |
4 slices bacon |
16 ounces cocktail onions, drained |
2 teaspoons sugar |
1/2 teaspoon dried thyme |
1 1/2 teaspoons cider vinegar |
3/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Trim green beans and cut in half. 2. Cook beans in boiling water for 4 minutes or until crisp-tender. 3. Rinse with cold water; drain and pat dry. 4. Cook bacon in a large nonstick skillet over medium-high heat until crisp. 5. Remove bacon from pan, reserving 2 tablespoons drippings in pan. 6. Crumble bacon and set aside. 7. Add onions to drippings, cook 3 minutes stirring occasionally. 8. Add sugar and thyme, cook 3 minutes or until onions are golden brown. 9. Add beans and cook for 2 minutes or until thoroughly heated. 10. Add vinegar, salt and pepper; toss to coat. 11. Stir in crumbled bacon just before serving. |
