This is a delicious side dish from Everyday Food adapted ,added some took away some and liked the result. Refrigerated a day(recommended)..can reheat or eat cold..as a main for brunch as a bruschetta or a side for supper. Read more . Add fresh basil if you like. Ingredients:

2 teaspoons olive oil |
1 small shallot, minced |
2 tblsp pine nuts |
2 pints grape tomatoes (4 cups) |
small black and green olives to taste |
2 tablespoons chopped fresh cilantro |
kosher salt and ground pepper |
Directions:
1. In a large skillet, heat oil over medium-low heat. 2. Cook shallot, pine nuts stirring often, about 5 minutes or until pine nuts are a little crispy and shallot is soft'. 3. Add tomatoes . 4. Bring to a simmer; cook, covered, 5 minutes. 5. Add a bit of water as needed. 6. Uncover, add olives and raise heat to medium-high; cook, tossing often, until tomatoes have softened and added water has evaporated, about 3 minutes. 7. Stir in cilantro. 8. Season with kosher salt and pepper; toss to combine. |
