Sautéed Corn With Onion And Tomatoes |

It seems the corn, tomato and Vidalia onion crops all come in at about the same time. It only made good sense to me to try something with them all in the same dish. Ingredients:
6-8 ears fresh corn |
1 large tomato – red but firm |
2-3 slices sweet vidalia onion |
1 clove garlic |
2-3 tablespoons butter |
salt |
ground black pepper |
Directions:
1. Shuck and wash corn. Use a vegetable brush to remove corn silk. 2. Cut corn from cob. 3. Remove blossom and stem scabs from tomato and dice the tomato. (Chilling the tomato will make dicing easier.) 4. Chop the onion to pieces approx. the same size as the cut corn. 5. Finely chop the garlic. 6. Melt butter in a heavy skillet over medium high heat. 7. Add all ingredients to the pan and season to taste with salt and ground black pepper. 8. Sauté 1-2 minutes and reduce heat to medium. 9. Continue to sauté until onion just begins to clear, being careful not to overcook tomato. |
