SAUTÉED CARROTS WITH ALMONDS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Quincy Estate in Rowlett, Texas in 1997. Ingredients:
2-1/2 tablespoons butter |
2 pounds carrots sliced |
1/4 cup apple juice |
1 tablespoon lemon juice |
2 tablespoons chives |
1/2 cup almonds sliced |
1/4 teaspoon salt |
Directions:
1. Heat butter in a large skillet then sauté carrots over moderate heat 15 minutes stirring often. 2. Add apple juice and sauté stirring until it is all absorbed. 3. Stir in remaining ingredients and serve. |
