Sauteed Caraway Bell Peppers |

SAUTÉED CARAWAY BELL PEPPERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Whitten Estate in Garland, Texas in 1982. Ingredients:
1-1/2 teaspoons caraway seeds |
2 tablespoons extra virgin olive oil |
1/2 teaspoon dried crushed red pepper |
1 large green bell pepper cut into strips |
1 large yellow bell pepper cut into strips |
1 large red bell pepper cut into strips |
2 garlic cloves minced |
1 tablespoon balsamic vinegar |
Directions:
1. Stir caraway seeds in large nonstick skillet over medium heat until fragrant about 1 minute. 2. Stir in oil and crushed red pepper. 3. Add peppers and garlic then cover and cook over low heat 10 minutes stirring occasionally. 4. Uncover and sauté stirring frequently until peppers are tender about 20 minutes. 5. Stir in the vinegar then season with salt and serve. |
