Sauteed Brussels Sprouts with Lemon Juice and Pistachios |

By cooking sprout leaves only briefly, you preserve their nutty flavor. Ingredients:
3 tablespoons grapeseed oil |
1 tbsp minced shallot |
1 1/2 pounds brussels sprouts, trimmed with leaves pulled from cores-discard cores |
3/4 cup pistachio nuts |
2 tbsp lemon juice |
Directions:
1. Heat oil in large non stick skillet over medium high heat. Add shallot and stir 20 seconds. 2. Add brussels sprouts leaves and pistachios and sautee until leaves begin to soften but are still bright green, about 3 minutes. 3. Drizzle with lemon juice and add salt and pepper to taste. Transfer to bowl and serve. |
