Sauteed Broccoli Rabe With Garlic |

Ingredients:
2 heads broccoli rabe |
1/4 cup olive oil |
3 cloves garlic, chopped |
1/2 tsp. crushed red pepper flakes |
1/4 cup dry breadcrumbs |
salt and pepper to taste |
Directions:
1. Blanch broccoli rabe in a large pot of boiling salted water for 2-3 minutes. Drain and shock in ice bath. Drain and wrap in a dry towel, squeezing out any excesss water. In a large saute pan, cook garlic and crushed red pepper flakes for 1 minute. Add broccoli rabe and cook and stir until heated through. Stir in breadcrumbs and toss all together. Season to taste with salt and pepper. |
