This is a great way to use every part of the fresh beets you buy. You can get two delicious side dishes out of this one vegetable. Beet greens also have great nutritional value. Ingredients:
greens from 1 bunch of beets, torn into pieces |
1 tablespoon olive oil |
4 cloves garlic, minced |
1 small red onion |
freshly ground black pepper |
freshly ground sea salt |
Directions:
1. Heat the olive oil in a skillet over medium-low heat 2. Add the garlic, onion, and a little sea salt; cook until translucent 3. Add the beet greens to the skillet 4. Cook and stir until greens are wilted and tender 5. Season with salt and pepper and serve |
