Sauteed Beans and Veggies |

The beans add a nice flavor to this dish. Amounts are approximate, I tend to eyeball. This is a very quick side dish to make. You know when this dish is done by sight, so cooking time is a complete guess. (It doesn't take long though!) Ingredients:
1 medium onion, chopped |
1 (19 ounce) can fava beans or 1 (19 ounce) can butter beans (also great) |
1/2 lb frozen peas |
1 lb frozen asparagus |
3 tablespoons olive oil |
salt and pepper |
Directions:
1. Heat oil in pan. 2. Sautee onion until tender. 3. Add beans, peas and asparagus and cook over medium heat until beans begin to wrinkle. 4. Add salt and pepper to taste. |
