Sauteed Baby Spinach With Shallots |

Easy spinach side Ingredients:
1 1/2 lb. baby spinach, washed and stems removed |
2 large shallots, thinly sliced |
3 tbls. olive oil |
salt and pepper, to taste |
Directions:
1. Stack spinach and cut into 1/2 in. strips (called chiffonade) 2. In skillet, heat oil and add shallots and cook until tender 3. Turn heat up to med-high 4. Add spinach and salt and pepper 5. Saute until wilted, about 3 minutes |
