Another very easy yet very tasty and refreshing side dish. We love the combination of asparagus, herbs and mushrooms. This one is wonderful with pork, seafood or chicken.
Ingredients:
kosher salt
1 pound asparagus trimmed
1-1/2 tablespoons butter
1 teaspoon olive oil
2 ounces fresh morels sliced
1 teaspoon fresh thyme chopped
1 teaspoon salt
2 teaspoons freshly ground black pepper
Directions:
1. Bring an inch or two of water in a skillet to a boil with a teaspoon of salt.
2. Have a large bowl of ice water standing by in the sink.
3. Add the asparagus to the boiling water and cook 5 minutes.
4. Remove spears to the ice water.
5. When the asparagus spears have cooled drain and set aside.
6. Heat butter and oil in a large skillet over medium high heat until butter stops foaming.
7. Add morels, asparagus, thyme, salt and pepper.
8. Stir until morels are wilted and asparagus is just heated through.
